From the attractive hilltop comune of Olevano Romano in the Ciociara hills south east of Rome, Cirsium is made from the ancient autochthonous grape variety Cesanese d’Affile, manually gathered from 50 year old vines ‘alberello’ trained in south west facing vineyards immediately below the commune. Yielding no more than 1 – 1.5 kg per plant, initial fermentation for 15 days in temperature controlled stainless steel, followed by malolactic fermentation in new barriques then aged on the deposit in regular barrels. Lightly filtered before bottling.

Aroma is reminiscent of mature cherries with notes typical of Pinot Nero and some floral suggestions. Deeply satisfying with damson-like richness on the palate.
